Thinking of going to Istanbul for Christmas. Any feedback on hotels or cheap/most direct flight?

Can't help you on hotels, but I went last Summer. Flew through Paris with Air France for about €250 return. You can fly direct from Dublin with Turkish airlines too but I think that was €375 return.

KLM via Amsterdam is another option. I flew with Turkish Airlines the last time I was there.

I stayed here. Nice hotel. Excellent location near the Blue Mosque and Grand Bazaar and with a tram stop 2 minutes walk away.

Malev from Dublin via budapest are cheaper still iirc.

The new W istanbul is a nice funky 5 star hotel.
