I've had a craving for boxty the last while, anyone know where you can get it in Galway? Could make it myself but too damn lazy and I know it'd take a few attempts to get it right.

    Potato's
    Flour
    Salt
    Milk

Grate 3 Large Potato's until they are like a mulchy state
Add flour and a pinch of salt with a sieve and keep mixing till the mixture becomes slightly firm, Add Milk to loosen the mixture so it moves about but not too fast and mix it all together.

Fry in a hot pan with Real Butter(No Spreads)
Fry on both sides till it's golden brown

    Eat!!!!!!

Its a delicacy found in the border counties of the north, I haven't heard of it since I used to live in Leitrim. Yes, I used to live in Leitrim. No, I won't point it out to you on a map, find your own damn local leprechaun guide.

I made Boxty and it was smashing.

    I used:

Three raw potatoes (grated and excess water squeezed out)
    Three cooked potatoes
About a half cup of flour
About a half cup of milk
    Salt
    About half a whisked egg

Mix it all together into a gloopy paste and dollop onto the pan. Made about six big pieces.

    It was tasty tasty.

can i get some more direction in the cookin bit , i tried with the previous recipe and wasn't to sure about the potatoes, i'm guessing u just chuck it all in a bowl and blend or is that bad

Just mix it by hand and then spoon it onto a frying pan in pieces about an inch thick. Cook both sides.
