There was a crowd called Sligo Higashi who entered people into the MMA league. Don't know anything else about them unfortunately.

As far as I know they have disbanded, the coaches there moved on to other things. There are still some boys from Sligo who take part in the league so if no-one else can help and if you could find them, then maybe you can hire....sorry went off topic there. Ryan and Morgan Smyth are the lads I am thinking of, but unfortunately I don't have their contact info.
