Just came across this new route for this winter. Has anyone been to the resorts nearby and can let us know what they're like. Thinking mainly Sauze D. or Sestriere but open to other suggestions>

There are a few resorts close by in the Alps Maritime although you wouldn't have seen them in many brochures. Look on the Ryaniar website for more details of nearby resorts. I know a stage of the Tour de France went through Cuneo this year and they went over Europe's highest road pass at close to 3000m. This part of the Alps can have poor snow even if the rest of the Alps is good as is more reliant on weather systems from the Med rather than the Atlantic. I'm surprised Ryanair is flying here as they also fly to Turin and that is very close, must be getting some regional subsidies.
