I was reading up on some postgraduate courses and they specify an honours degree. Does that mean you can't apply for a postgrad when you're in your final year? That's what I had intended to do but you don't know what results your going to get though? So do you have to take a year out before applying or something?

Nah, apply away - say instead "expected honours degree". Good references are important too. Some courses will accept you provisionally, and ask for confirmation when you do graduate.
