booking a last minute holiday

We're planning on heading off somewhere sunny for a week at the end of the month. Due to circumstances we're going to have to book something pretty much last minute. We're not fussed about where as long as it is sunny and has beer. The only question is whether it is too risky to wait until the week before to book something for four people. I see budget travel showing destinations every day such as a holiday to salou leaving in an hours time for €97.

Does anybody have any experience of just booking pretty much last minute and are the current offers likely to subside a bit towards the end of the month?
