Stainless steel or copper

I am about to have a solar water heating system installed and am trying to find out if there is any significant difference between a copper cylinder and a stainless steel one. I have been told that one may have significantly better insulating properties than the other however I have also been told that there is not any major difference. I am not installing a pressurised system so either one will work, However since it is such a large investment I want to be sure that I have the correct components installed. Any help would be appreciated.

I replaced a 400l glass lined cylinder this year. It cost €700 4 years ago. I have a pressurised system. (Just out of warrenty)

Seems the coil burst! Very unusual seemingly.
Still not sure if I'm covered by insurance. Its a nightmare.

I replaced it with an €1800 stainless steel 300l cylinder. Plus installation cost!

Tube Solar panel isn't great since, only 34 degrees today, 50 max this year!
Its been expensive and I'm still not sure what happened!
