I have a Ex HD that I use for various things, I want to use with my PS3 to listen to music, watch videos and such.

Wondering if music cannot be in subfolders but only a single folder- as the PS3 doesn't seem to find them?

The Ext HDD needs to be FAT32. PS3 cannot read NTFS drives / partitions.

Yes I realise that, but can the music be in subfolders or can they only be in folders and then no more - cos any folders that had subfolders said there were no music files in them...

Just create folders in the root directory called Game, Music, Picture, Video and then drop your files/folders into them. You have to do this in order for the PS3 to see your files.

You can select the external drive in the XMB, hit the triangle button and select "Show All", no need to make any folders.

If you make the folders you don't need to press the triangle and select 'Show All' every single time. Less effort.
