I'm pretty sure its Cantonese, but after reading that most people speak Mandarin too am a little confused.

Are the street signs in Cantonese or Mandarin and what is the spoken language of the city?

    Thanks!

The main spoken language in the city would be Cantonese, although most people would speaking some level of Mandarin also. As to whether signs would be in traditional or simplified characters I'm not sure.

Yes, it's Cantonese. But Mandarin is the national language of China and it works fine in Guangzhou.

The street signs are in simplified characters, as they are everywhere else in China (Hong Kong excepted). You can pronounce them in Cantonese or Mandarin according to your preference :)
