I've to change my immersion switch at thre weekend. There's very little give on the wiring, is it ok to separate them into connecter blocks so I only have 1 wire going into each terminal of the actual switch?

It would be preferable to have them going into the switch as before.

If you do extend as you describe, make sure the cable you use is at lease 2.5mm sq. Insulate the connectors also and make sure the connection with the wire is well made.

Have you checked if you have space in the box for the connectors?
