Abbeyleix is the only town of any size you still have to go through - there's certainly plenty of cafes etc in the town, don't know about parks or playgrounds.

The best rest area on the Cork Road is Urlingford just as you leave on the right hand side heading for Cork. There's a big coach park beside all the tour buses stop here. As for child friendly, with traffic it's not really but best services available with parking plus it's roughly half way.

There's a picnic area just after Durrow (travelling Dublin-Cork) on the left hand side of the road. It's across from this restaurant place. There's what looks like a park area in the centre of the town as well.

    Rock of Cashel perhaps?

    I'd go with
Around the Rock of Cashel, only just over an hour and 15 from Cork.
Durrow, the green in the centre of the Town, another 30-40mins up the road, and about an hour and a 1/2 from the RedCow

Depending on the age of the kids, 90minutes between stops should stop them getting too cranky
