I've applied for the MA in Development in the School of Law & Gov in DCU, with 2 of the other 4 courses as backups. My problem is that they've already put the deadlines back twice so far this year, once at the end of May when they first expired, and then again at the end of June when they expired for a second time; the current deadline is the first of August. I'm just wondering if anyone knows what's going on? Are there usually a large amount of applications for these courses, or is it only this year that they seemingly have problems in filling the places? More generally, does anyone have any experience of the courses themselves?

I'm the Director of MA Programmes in the School of Law & Government at DCU, which means I'm responsible for the administration of our five MA courses, including the MDEV.

Good Q. re. the repeated changes to the deadline(s), the reasons behind it are actually pretty straightforward:

There are indeed hundreds of applicants for these courses--those applying early have already received offers and others are on a waiting list--but there are always students who do not make their mind up until later in the Summer and so once we continue to have interest we continue to extend the deadline until usually max. the end of July (which is where it stands now). And yes, happily, this tends to happen every year due to high interest in our courses.
