    The 3 client doesn't support wi-fi, just 3G. Skype's own beta symbian client supports wi-fi - have a look in the settings for anything that mentions access point and make sure you have a wi-fi one selected. Unclear as to where you got your version but I recommend you check out Fring at www.fring.com - supports wi-fi and 3G and will prioritise the wi-fi access points when they are available.

    I used Fring (free) on my E51. To phone an actual phonenumber you also need to sign up for and pay for SkypeOut (10 yoyo min AFAICR).
    However when I called anyone they literally could not understand what I was saying (and not just because of the way I mumble ;))
    So I uninstalled Fring and tried Truphone. Again in this case you have to buy call credit (but you get USD2 free). The calls seem to be a bit more expensive than SkypeOut but in my limited experience to date the call quality is way better.

    Truphone is much better than fring i would say. I think you can choose the codec on truphone but not on fring.

    @Frigiliana
    it not really that hard to find... ;)

    http://www.skype.com/download/skype/mobile/

    the E51 is not explicitly listed, but as a java app, you should be able to run the N95 or N80 one.
