Best resolution for display for standard def TV in Vista MCE

Having recently purchased a 32" LCD TV 720p, I've been messing around with my display and resolution, without hitting a point where I'm happy with the result.

    My scenario:
I have s-video split, with one input into LCD and one into a composite convertor for the VCR, which I use to watch MCE throughout the house.
I have a DVI to HDMI cable from PC to LCD.
I would like to have a dual view from my gainward nvidia 8500GT. You would expect the HDMI picture on LCD to be better than svideo but I still want be able to watch MCE on another telly without having to go into the nvidia settings.
I use MCE mostly for watching recordings so its in that mode that I want my best picture.

    The problem:
The s-video picture is quite good but not near as good as RGB from the NTL box. Whats the best resolution to set for MCE? Is it 720x576 so that it matches the TV input, or something higher?
The HDMI picture is great when using the desktop but not so hot when watching TV. Again, which resolution should get me the best picture.
Using dualview, I don't think the video card can handle TV on both displays too well as it looks quite glichy and can sometimes pause and then speed up. So regardless, I might have to pick the best output for my LCD and if this is DVI then go into nvidia settings if I want to use another telly. (Not too often tbh). Anyone got any suggestions? One small note is that I have to use the nvidia drivers that came with the card to get s-video overscan. Using the latest drivers makes the screen size too small.

I've played around with the nvidia colour settings as suggested in thread by stevejazzx and subway. I've a decent scart to composite cable feeding into the tuner card now too.

So if anyone has any suggestions/answers. Cheers
