Recommend me a destination 2 hours from Dublin

Looking for a recommendation for a destination about 2 hours drive from Dublin. I'm looking for a decent hotel in a village or town, not a city. Although I'd consider Kilkenny
The hotel should be near a couple of pubs and decent restaurant. Looking for a proper pub, not a hotel bar.
Had been looking at the Lismore House Hotel in Lismore, Waterford but it's booked out for the June Holiday weekend.
Suggestions welcome.
PS - don't fancy a plane so island of Ireland only please.0
