I have just replaced one of the memory modules in my early 2006 iMac to make it a 1.5GB machine. It is indeed much faster on startup and apps open quicker and all that. Is there any thing from the software point of view that I might do to make best use of the new memory? And oh yea, does anyone want to buy 512 mb of memory…

Not really, the apps will take up the new memory that is now available.

On Mac systems before OS X (System 6 - 9.2), you had to/could set the desired and maximum amount of RAM that the app would use, but in OS X, this is all automatic.
