    Hello Lads-I am stepping into this forum because I think one of you maybe able to help me. 20 years ago, a friends mother made some home-made baileys(Co. Meath). My first adventure to Ireland. It was very good, and I think, fairly easy to make. I would rather have a receipt from an Irish person with first hand experience verses the yahoo's I found online. Seeing how you all seem to know your drink, and women by the looks of it, I thought I would give you a try. Please note that I would rather have a pint(several, really) of Guinness than a baileys but, the weather has been s@*! and I need to do something productive and making booze is always productive.

    Tough call, OP. Bailey's hasn't been made with real whiskey for some time,so I don't know how to get hold of the industrial run-off Diageo base it on these days.

    Get some cream, some whiskey and some sugar and lash them together in various quantities until you get something drinkable.

    Alternatively, buy a bottle of Bailey's.

    A blender is a good thing to have :D Vanilla and Almond essence give a nice flavour but not too much, along with spoon of coffee if your making around 500ml of it. One recipe I've had before is

    1 cup light cream
    1 (14 oz.) can sweetened condensed milk
    1 2/3 cup Irish Whiskey
    1 teaspoon instant coffee
    2 tablespoons chocolate syrup
    1 teaspoon vanilla extract

    Quite nice :) the condensed milk can make it quite sweet though, I'm not sure if there's an unsweetened condensed milk and if you don't like whiskey straight they start your first batch with a slightly smaller amount :)

    I love the original baileys, and i would like to try the mint version but it seems to be only available in big bottles, has anyone seen it in smaller versions. Thanks.

    The mint one is absolute horrible.

    I love a Baileys and Creme de Menthe mixed over ice and assumed that the mint Baileys would be something similar but I couldn't have been more disappointed. The bottle is still sitting in my friends fridge over a year later and noone has touched it.

    The new flavoured Baileys are available now in half bottles but you have to buy a twin pack of both . . or ask your local off licence nicely would they split one for you!
