Hey can anyone recommend a flight operator that goes from Dublin to Nepal with a couple of stops? I'd like to plan the whole way through rather than go to London the night before and all that

I'd try farechase.yahoo.com. Bangkok is useful hub in SE Asia for good value flights, there are plenty of flights from there to Katmandu or if you want a really different side-trip you could stop off in Bhutan between BK and Kathmandu.
Heading that direction later in year myself, planning on getting there overland though, that's if Tibet settles down and they'll let me through!!

there are no direct flights to kathmandu from dublin so your options are DUB-LDN-KTM or something like DUB-FRA-DEL-KTM with Lufthansa (the DEL-KTM prob with an affiliate). Obviously the DUB-LDN-KTM makes more sense as you wont be hanging around airports.

I highly doubt flying as far as bangkok and 2/3hours back would make ANY sense! I had looked at BKK-KTM flights before and they were 500ish so factor in the cost of DUB-BKK and your going to end up worse off.

If you've any questions about Nepal feel free to ask. I spent 5 weeks there last summer incl a 2 week Everest trek. Posted about it here before if you search for it though

I suggested this as outside of Europe Bangkok is good option as stopover imo and would certainly create real contrast with Nepal. I don't think its that crazy a suggestion as 2/3 hour flight when travelling 10-12+ isn't very much and there are lots of options for flights from here to KTH, plus lots of sidetrip options. Travelling is not only about getting to a destination as quickly as possible but enjoying the journey as well, or at least thats how I feel about it!

Etihad do a flight through Abu Dhabi, which can be pretty cheap if you book way in advance, and has a pretty short connection time. Found them way cheaper (like, €500) than the alternatives when I needed them.
