How come in UCC last year law was 500 whereas in Dublin business school it was 255? Are they different courses or is one better than the other?

DBS is private & there are fees, which is a big part of the difference I'd imagine. Don't know anything about difference in merit.

The points are decided by the demand for the course not whether one is better than another. But as a general rule the higher the points the more recognised the degree will be by employers at first glance anyway.

Even as a general rule that's nonsense.

No its what JennyQ said don't mind Ri na Heireann

DBS is a private school and it attracts students by the lower points, they still get the money from fee's like

No what I said made perfect sense. If you have an understanding of how the CAO system works you'd see that.
All courses points are decided as a result of demand. The high fee's in these private higher educations facilities keeps demand low.
Naturally enough the higher the points, the higher the demand, which in effect signifies a good course. I'd be baffled to think that a lot of people on high points would apply for poor courses.
For example there is a level 8 LAw course in WIT which not many are even aware of. The points are very low but the course is recognised as not being great. In theory a law degree is a law degree regardless of where one gets it but in practice when two candidates go for a job and one has studied law at UCD and the other in say WIT it's obvious the UCD graduate has a major advantage as far as first impressions go.
The same is true for Portabello,DBS,Griffiths or other schools like that. Although the points are kept low by fees they are generally not as good as courses in the NUI's.
