When you Jailbreak an iTouch and install loads of 3rd Party Apps, does the 16GB get used or is there free space available for apps?

no it eats into your 16GB, it'll show up as "other" in your iPod's window in iTunes

doesn't take up anymore than like 100megs, of course if you start installing stuff then that figure rises.
