Right lets say if your driving a Bugatti veyron and get pulled over by the coppers. It is just a routine check, nothing important. So they send you on your way and its a 60 mph zone. Would it be illegal to accelerate 0 - 60mph in 2.5 secs?

Technically you haven't broken the speed limit, but they could do you for driving without due care and attention.

I've driven bikes that can do 0-60 in 2.9 seconds , but wouldn't dream off opening them up moving away from a check point. You'd be just asking for trouble to be honest.
