Stayed in the Goldstar Resort last year for a few nights.

Lovely rooms, if a little pricey, but that's Nice. Definitely recommended

    OP, what sort of budget?

Venere.com has a good range of hotels in Nice and includes reviews. Generally the reviews are bang on, in my experience.

Can't recommend a hotel in Nice as we never have to stay in one!

Around €100 a night for the two of us

    Try Hotel Suisse, then.

It's at the very end of the Promenade des Anglais and right next to the Chateau. 1 minute walk to the port, 2 minutes to Cours Salaya and depending on your walking pace, no more than 10 minutes to Place Messena.

The hotel has fantastic views over the bay, especially at sunset.

This is the hotel nearest to where I stay when I go to Nice, but with that budget there are plenty of decent hotels to be had and to be honest, in Nice, unless you're spending BIG money, there's really not much difference in the hotels.
