Hard and tough or succulent and juicy?

    Personally I much prefer succulent and juicy - a much more pleasant experience. Yet some people claim to prefer the tougher texture - can't understand it for the life of me.

    So, how do you like the texture to be when you wrap your mouth around... your rasher?

    cannot beat the succulent an juicy with a nice crisp "rim".
    Test the texture with the occasional poke..it's nearly there when a nice sheen appears and the flesh is a light pink - always cover if gets too noisy or the grease begins to spatter - bad for the flange of your breeks.....
