the only place in south east asia you'll need a visa beforehand for is vietnam, all the other you can get at the borders. you can send off your visa to the embassy in london or just do it when you get over, it only takes a couple of days in bangkok or phnom phen. the others cost about $20 when your getting them done.
its very handy to have the working holiday visa for oz as i don't know if you can get it if you;re in the country and you might need to work to make a bit of cash.
south america i'm not 100% sure. going there myself but don't think irish people have to get them in advance.

Thailand is easy, visa on entry.

For Laos again visa on entry (15 days) but you need to pay $35 at the border and need a passport photo (or for an extra $1 they will photocopy the picture in your passport). You'll also need another $1 to pay the 'for checking passport' fee....

You can get a longer term visa from Lao embassy but there is none here or UK so probably better to get a visa in Bangkok or Hanoi if you need more than 15 days. You can also buy an extension in Lao if needed.

You might need to pay a 'fee' now and then outside the capital Vientiane, but that is rare enough now. You are also supposed to check in to local emigration offices as you travel around but there is almost never anyone there...
