You don't have to check-in 2 hours before a flight.

The exact answer to your question is readily available on the website of the airline you have a ticket with, different airlines have different minimum check-in times.

The times they give are strictly MINIMUM check-in times, if you are so much as 1 minute later than those you most likely will not be allowed fly.

It is always a good idea to give yourself lots of time incase of delays getting to the airport and slow queues to get through security, even if you check-in on time if you cannot get to the departure gate at least 10mns before the scheduled departure time you can be denied boarding.

Depending on what time and day 2 hours would not be OTT for Dublin.

way OTT in my opinion. even for an international flight i rarely get there more than an hour early (if i've checked in online or am flying with a company which has self check in ). I'm also pretty sure there's a fast track for national flights through security.
