    Select Sync only checked items.
    Uncheck the videos in iTunes.

    OR specify which videos you want synced in the video sync options in iTunes.

    you can also do it directly from the video list on the itouch - hard to explain but if you swipe your finger from the right to left on the list it will bring up an option to delete

    of course it will reappear once you sync again unless you do as aidan says
