If I play MP3s or AAC files over a 5.1 system will they play in proper surround sound? Or is it simply the same music played through five different speakers?

Normally music will only be recorded in 2 channels, so it's up to the surround processor to decide what it wants to do with the other 4 speakers. On mine the left and right surround output the same as the main left and right, the sub and centre are a mix of left and right channels, the centre being a lower volume than the main left and right... There'll probably be different settings on the processor for how to handle stereo sound sources.

For real surround there has to be recorded surround tracks , the only way to get this in music is either from a music DVD or an SACD or DVD audio.

What you are describing , making a surround effect from stereo , is typically described as Dolby pro logic II and is a feature of a lot of amps. So if thats what you want then look for the pro logic II symbol on a system.
