Some programs have an option in them to autmatically start ups. While some will have a shortcut in your start up folder. Either disbale the option within the program or remove the shortcut from Start Menu -> Programs -> Start Up. Make sure its just a shortcut you are deleting from there.

Click on start then run. Type in msconfig and click ok. Go to startup tab and deselect whatever you dont want starting. Its usually a good idea to google an item if you dont recognise it because it could cause problems if you deselect it and then it turns out to be an essential start up item.

Nice one, cheers for the replies. It's Quick Time I mainly want to disable and it doesn't give it as an option in its preferences.

i believe that with quicktime if you search your pc for a file called qttask and delete it it won't start with the pc anymore

Quicktime can be annoying. If you can't disable it via MSConfig, we can remove it via HijackThis

I used YOUcancallme Al's method and it did the job, spot on.
