Am I right in thinking that Cat 6 cable can be terminated as different types of connection, i.e telephone, network, VGA, Scart, HDMI ? and the other end through a cental switch panel ?

Would I need one cable per connection or can it carry more than one signal ?

Not just Cat6 but also Cat5 can be terminated in this way using "baluns" but you usually need some form of distribution depending on how many rooms and how many times you want to split the signal so you dont lose quality.

I am guessing you want to wire a new build to provide all the various incoming services (i.e. phone, tv, pc) to multiple rooms?

www.abitana.com or www.irishhomenet.com both offer a similar service to what you describe but they use a proprietary cable and connectors.
