    Take fillets from carcase. lay to oone side

    Boil carcase with leeks and seasoning for about 1 hour to make stock.

    remove pot of stock and dump carcase.

    Put fillets in frying pan with teaspone or two of oil and fry on both sides for i minute.

    Pour all stock into frying pan and keep turning fillets every minute until stock has reduced and thickened to make a noce gravy.

    Then serve on bed of spinach and mached potato.

    gorgeous and simple.

    Pluck it and clean it like a chicken. Put a good few slices of non seasoned streaky bacon over the breast and oven roast it. The streaky bacon keeps the meat a bit more moist. Go by the the general rule of 1/2 hour/lb in the oven...ready when the juices run clear

    Roast it breast side down in the oven as well. Keeps the breast meat juicy.

    i dip the breasts in flour and fry on a char grill pan keeps all the flavor in,too long and its rubber teritry thats the only bad part,,,,, same part in the gravy boil the carcus and make gravy from stock and pan fry

    That pie thingamajig looks like the right job to make something fairly tasty if you have a few bits and bobs in the freezer that won't make a full meal on their own. Couple of pigeon fillets, boned shoulder of hare, a few chunks of rabbit... and there you go : drop dead gorgeous meal for a few people. Even a couple of chunks of nice beef in it wouldn't do no harm
