I'm thinking of upgrading from my D70s to a D80. I can't find much to base it on online, how much do you think would be fair to ask for a mint condition D70s body only?

I'd offer between 250-300 euro, depending on how "mint" it is...

any merit in keeping it as a spare body ?

I'm a big believer in spare bodies. Apart from the unlikely event of your main camera malfunctioning when you need it you can always use the spare as a separate shooter. Saves having to change lenses all the time. And you can use the cheaper body for those occasions when you want to only shoot snapshots.
