i have two more recent glowing references in different areas how do you think that will go down?

Will they not give you a reference? They should if you didn't commit any serious problems within the company while you worked there.

The company runs a number of restaurants in a particular place and the one i worked in is gone and there are no staff left there that i worked with.

Then I guess all you can do is explain that.

Can you track down anyone that could give you a reference, even if they work elsewhere? Does this company have a HR department who can at least verify that you did work there?

that sounds like a reasonable thing to say. don't know if it should go in the cover letter, CV, or mentioned in the interview.

maybe put down the experience from 5 years ago, but just give the two most recent jobs as references, and then mention why you didn't put down the prior relevant job as a reference?
