emulsifing oil and water

    Hi,

What is the best way of emulsifing oil and water so that the solution is water soluble?

I want to mix fish oil with water for fishing purposes, ordinary fish oil just floats to the surface when the bait hits the bottom, therefore making it ineffective as an attractant. I want it to stay at the bottom and mix with the water.

    Any ideas??? Thanks

I'm not entirely sure on the mechanics of what you're suggesting, though the best emulsifier you'd have on hand would be washing up liquid.

I'm guessing you need this to be food safe though so the next best thing I'd reckon you could use are egg yokes, they are really quite good emulsifiers. Egg whites also work if you less contaminating colour/flavour, but yokes tend to be better. They contain lecithin and proteins, some that are hydrophobic and some that are hydrophilic (repel and attract water), allowing a good emulsion. Try it out by mixing some up with oil and water.
