I have learned that cooking in alu or copper pans can be a health hazard. If I can't use these two materials, which can I then?

its a particular problem if you cook an acidic food in them - the trace amounts leached out are tiny, but they are still leached out. Stainless steel is not affected by this.

Iron also leaches out with acidic food - but in this case, you actually fortify the food with iron which could actually be of benefit to your health.

I though most modern pans were made of alu. How do I know if it's stainless steel or not. (there's nothing written on the pans)

you can tell by the weight. Alu is very light, stainless steel is a lot heavier.
