Kosher Salt.... why?

I use a lot of recipes websites online when I'm cooking. Most of them are American and they nearly all say to use kosher salt. Now, I know that kosher food is food that has been prepared in accordance to Jewish laws but i always thought that it only referred to meat and other animal products like milk/cream.

So what is kosher salt and why do most recipes suggest it? Surely not everyone creating the recipe is Jewish. Is it better for cooking than ordinary table/sea salt?
