    From a drivers point of view, the only thing he needed to do was apply a bit of throttle to get some traction when the vehicle was starting to roll down sideways. Which he did. I'd say most drivers would have done so instinctively

    I'd say there was minimal to zero engine braking involved in that manoeuvre.
    The only way out of that sort of thing is to drive through it, keeping the wheels turning at the same speed as the vehicle is descending the slope, thus giving some semblance of steering control.
    Trying to brake or hold it on the engine would only lead to an out of control slide.

    The most crucial thing he did there was have the wheels turned to the left fully as it came back onto four wheels.
