I was there in 1998 (Time is flying by at a frightening rate). Flew with Emirates via DXB and stopped in Dubai for a few days on the way back. From what I remember we stayed at a place called Bentotha beach near Galle. Galle was interesting for a day or two, There is a fort there and loads of snake charmers. We did a tour up to Kandy and stayed up there for one night at the top of the mountain, I think the hotel was called the Topaz or something. We visited the temple of the golden tooth and all that stuff. We also visited the Pinawalla elephant place (Is it an orphanage or a sanctuary??), my girlfriend of the time loved that, you could go down to the lake and help bathe the elephants. I stayed up in the bar overlooking all the action and sank a few tuskers.
