    Quicksilver- an app launcher that lets you open up anything from a url to a playlist in just a few keypresses- I'm addicted.

    Coconut Flavo- some dinky little wireless/battery/info utilities.

    SnapnDrag- Screen cap utility.

    All of the following are free or open source (except Remote Buddy which costs €10 if you buy it now, and will be €20 once the final version is released soon), and I use them pretty much every day.

    Firefox optimized for your Mac - proper Aqua form widgets and a speed boost for Firefox. Couple this with a Grapple skin and you'll never miss Safari. For the extremely pedantic (yes, I'm one of them), there are extensions that replace the individual stop/reload buttons with a single one and show a web page's loading progress in the address bar, available from the Mozilla site.

    AppDelete - since Apple's drag and drop installation method is second to none, but unfortunately their uninstallation method leaves a lot to be desired.

    Adium - connects to many IM protocols (including MSN); a lot more flexible than iChat or Messenger for Mac; unfortunately it has no AV support.

    Skype - internet telephony and video phone

    NeoOffice - I had problems with earlier versions but the latest 2.1 release seems to have solved them all. It's faster and looks prettier too. Currently the only Mac office suite to support Microsoft Office 07 file formats.

    Azureus - clunky, ugly, but the only BitTorrent client for Mac that supports selective downloading (download only specified files from torrents containing many)

    Remote Buddy - hugely enhances the functionality of the Apple Remote (and many other remotes apparently, although I haven't tried any others). Allows you to control your Mac from across the room by emulating the mouse with the remote, and has a seperate mode for many common Mac programs such as NeoOffice (e.g. control presentations), iTunes (switch songs, rate songs, etc.) and VLC, to name but a few. Currently available as an RC2 release, it offers a 60 day, fully functioning free trial.

    Google Desktop - not essential, but I dislike Spotlight and Quicksilver sent my heatsink and fans into overdrive when I tried to index the whole hard drive. So I use Quicksilver for everything in my Home folder and Google Desktop for everything else.

    Ukelele - create your own customised keyboard layouts. Great if you're using an external Windows keyboard with your Macbook or Mac Mini.

    Uno - for those that dislike the inconsistencies in the Aqua GUI (or, like me, just hate the brushed metal look).

    Little snitch. The free demo version stops running after 3 hours but all you have to do is go into system prefs and restart it. It's amazing how many apps phone home. Download here

    I bet all you macheads thought only billy "the kid" gates was spying on you. Steve "dirty mac" jobs is up to the same thing:D

    Does anyone know of an alternative to Stuffit? I don't like it one bit.

    It's not really needed that much anymore now that osx has it's own unzipping program built in. I can't remember the last time I used it.

    There doesn't seem to be an active mod on the Mac forum, is there?

    This thread really should be stickied as it's a question that's going to keep popping up. Plus the other Mac stickies are dated and not really providing any great source of information.

    Menu Meters - freeware utility that lives in the menu bar, enabling you to keep an eye on the CPU occupancy, HD space, RAM usage, Network throughput (any or all of them) - brilliant for those "is this Mac hanging, or is it just busy?"/"Is my 'net connection slowing, or is this just a big file?" moments. And doesn't take up much CPU itself.
