What are muscle enzymes ?

If you get a blood test to measure them what information does the result give you. i.e. what does it tell you about your muscles ?

Does it matter if it is high or low ?

You'd have to be a bit more specific. There are thousands of enzymes in the body and I imagine that there are more than a handful of different types found exclusively in muscle.

Basically an enzyme is a type of protein that performs a specific biochemical process, i.e. some enzymes break down other proteins, some help produce energy, etc.

Muscle enzymes are those specific enzymes released by damaged muscles, it is not possible to be very specific with individual enzymes though except with the heart (where Troponin-T and CK-MB are very cardiospecific), but to generally look at the pattern and from that figure out the source of the raised enzymes.

LDH, Creatinine Kinase, AST are all released in damaged muscle, but also from other cell lines as well......

They can be raised in damaged muscle such as from endurance sports.
