I hear people say how important this is as the standard is gettin better im and im more suited to stt's than cash tables so i need all the help i can get. So when looking for the best tables to play on do you just go to the tables with the highest average pots or just follow fish

If you are playing stt's there won't be average stacks

Yes tonc you are correct but I am sure the op is talking about cash games, following the fish around works well if you know who they are, unless i've spotted a player I usually go to the table with the highest average pot, most of these tables have large average stacks anyway but it also means a lot of money is moving around so if you play TAG at these tables its going to work out good most of the time.

The most important stat by a country mile is the % of players who see a flop. The higher the better. I don't know what site you play at and if they have that info, but if they do then that's what you should use.
