Is there a way to set up a laptop to automatically select a different screen layout when docked?

Yes. You can have profiles for docked and undocked. Profiles can be found under Control Panel -> System -> Hardware Tab -> Hardware Profiles. Dock your laptop, setup a profile and set the screen layout. Do the same again for undocked and don't forget to set the docking settting each time so that the laptop knows it's docked/undocked.
