Old movies scene changes

Watching an old movie this afternoon ("The Man Who Never Was", cracking show) and I noticed that the colour in each scene change perceptibly just before and after a scene changed. It's almost like it got flatter, duller. I knew about this before, of course, and thought I knew what caused this effect, but a brief google search revealed nothing. Any of you film buffs know what I'm talking about and what causes it?

Fades use to be done in camera I think. I know with old 16mm films they were.

This was done by closing the appature completely at the end of one take, and opening it back up at the beginning of the next.

Maybe that could be the cause. Not 100% though.
