Is there much difference in the 2 editions besides the Apache, MySQL & PHP server? I want to install ubuntu on a laptop and I'll be using it mainly for developing, so the above will be required for testing purposes.

Would I be better to install the desktop edition and then install XAMPP?

I believe the server version has no GUI as most servers wouldn't be accessed or administered graphically.

Make like easy for yourself and install plain old Ubuntu, Xubuntu, etc. It's a doddle to then install Apache, MySQL and PHP from the package manager.

There's basically no difference between the two "editions" (except in 6.06 for support updates).

All flavours of Ubuntu are just different groups of packages installed from the same repositories.

The ubuntu server CD might be more useful to you if you want to have more server based software on the CD rather than having to download it from the net.

Spot on. 6.06 has LTS [long-term support]. I think every three releases will have LTS from Ubuntu.

Be sure to put that machine behind a firewall [a router]. Ubuntu doesn't install a software firewall.
