I am really struggling to get a decent strategy down for these sort of cards, especially late in SNG tournaments.

I am talking about A2o - A8o and also to a lesser extent A2s - A7s. I just want to get opinion on the best way to play these cards depending on position, a lot of the time now I have taken to just folding them as they seem to be just costing me money.

Well you're learning. Ace rag is difficult hand to play in early position. In essence if you raise and you have a couple of callers or worse a reraise and an A comes on the flop What do you do ? Invaribably you're behind.
Mid - Late position you can judge it better and less likely that somebody else has an A.
You have pinpointed it as a leak in your game, so don't play them from early position even if they are suited. The amount of times when you hit a jammy 2 pair or straight will be easily counterfeited by the chips you spunk away on calling with a single A.
So my advice would be dont play it from early postion and if you're first in the pot from mid postion then play a bit more.
In Late Position 1st in dont be afraid to play more aggresively.
Late on in tournaments when the blinds are high if you're going to play these sort of hands do so aggresively and I would advise to throw them away or reraise if you arent first into the pot.
Late on there calling too many hands is a leak.

This applies to early stages of tournaments.

Fold them from UTG, UTG+1 MP1. Call with suited ace rags after that. Fold unsuited especially A6,A7 and A8. (No chance of a straight)

On the button and cutoff I usually raise with any Ace if folded to me. If there's a few limpers I just call. But be prepared to throw your A5 away if there's lots of action when you hit.
