Spy is quite fancy and people usually start dancing in the room on the left up the stairs.
The bar in the Morgan hotel is also nice. And you can book tables.
The South William kinda has a dance floor, but it is more trendy than dressy.
There is a new place in the Russell Court hotel called Krystal, which looks very fancy-dan.
Cocoon is quite dressy, but it is rather horrendous. There is a dance floor there too.
The Beacon Hotel out in Sandyford is very nice/dressy - like the Morgan, it is done in a ver Ian Schrager style. I'm not sure if he designed them or not.

I can't think of any more at the moment!
