Depends on how much you want to spend and whether you like in ear type or the cup type. You cant go wrong with Sennheizer headphones for quality a bit expensive more than other brands. http://www.sennheiser.co.uk/uk/icm.nsf/root/products_sennheiser_headphones

For open headphones, comfortable, with good sound and not too pricy you can't go wrong with Sennheiser PX100s. They'll cost you somewhere in the region of €40 - €50 but they're well worth it.

Bose in ear's. Serious Quality, but there about 100 euro. well worth it if your the type of person who wants really good sound..

i went through 3 pairs of sony fontopia's before descovering sennheiser cx300's (in-ear). about €50 or so. i've got mine about a year now without any issues at all.

if you want to go all out, look up Shure...

have a pair of these they are excellent got them in peats about a year ago for 40 euro or so. Block out external noise very well too (which was a priority for me at the time)

I have a set of these Sony-MDR-EX71's and they do the job for me. They're dead handy on the bus in the morning, block's out most outside noise. Not too expensive either, can't see any reason why you'd want to splash out any more, these have good quality, the only thing about them is that they can be a bit awkward to fit right on the ears.

I can anticipate some Sony bashing now but I like them...

I've heard many a story about those Sony ones having crazily flaky cords that fall apart rather quickly and even sometimes they first time the come in contact with sweat which is definitely a possibility when it comes to exercising.

I actually had a pair of these Sony headphones which I brought back after a week because they didn’t fit me properly. Build quality seemed ok to me though
