The Perfect Omelette

    Hello foodies, What fillings/ingredients do you add to your omelette to make it extra special? Any particular cheese you find the best also? Looking for some new ideas!:)

    Here's what I like :)

    - Chopped bacon or sausage
    - Sautéed onion or chopped spring onion
    - Sliced mushrooms
    - Cherry tomatoes chopped in half
    - 3 beaten eggs, with some black pepper, oregano and a pinch of salt
    - And a little black pepper and sliced brie on top, finished under the grill

    For a special treat I like using duck eggs instead of chicken and a drop of cream with it. Then I just put in lashings of mature cheddar. Fantastic!

    First a tip, when beating the eggs, pour in a tablespoon of boiling water and a knob of butter. This helps to keep the omelette firm.

    Simple tasty filling, similar to cornbb.
    1. Saute onion, thinly sliced mushroom and smoked bacon in butter.
    2. Make omelette, remove from pan and place on a flat surface
    3. Fill center of the omelette with lots of Philadelphia Cheese (any sour cream cheese will do) and sprinkle liberally with fresh-ground black pepper
    4. Add sautéed mix and fold omelette to form a leak-proof package (i.e tuck in the ends first, then fold over).
    5. Heat in pan over gentle flame till cheese melts.
    6. Serve with garlic toast and a fine Dijon mustard.

    *I've just made myself hungry for this, to the freezer*

    Corsican Omlette is my favourite. (Thanks Nigella)

    Butter
    Handful of mint
    3 eggs
    100g Chevre log

    Chop mint and fry in butter. Add seasoned and beaten eggs. Then crumble in the hard centre of a chevre log. Fold in the edges on two sides. Serve with some more fresh mint.
