havent actually played either but tony hawk project 8 or I'd say or best bet is lego star wars!

Kameo, bright and colourful. Would normally recommend Sonic but the demo I played was so awful and frustrating that I just couldn't.

Project Gotham 3 is pretty good - but it's at it's best if you can play it over Xbox live.
