I have ordered a Panasonic AX100 Projector and I going to be connecting it to a SKY HD box, now I have a 7.5m Component cable that I am using with my AE100 which works very well, will this give me a true HD image or do I need to get a HDMI cable?

Sky HD broadcasts at 1080i and the component connection takes this signal no bother, with a 7.5m run I'd say you will run into bother with a HDMI and would possibly need a repeater as HDMI leads do not like long runs
