Steaks - a question!

    This is driving me nuts, but I was out last night for a steak -
    You know when you get a steak that has a kind of 'powdery' texture?
    It is usually in some random hotel or not-so great ressie.
    They look the same -very even and firm feeling.
    But they are quite tender, and they always taste the same.

    Well I'm just wondering, are they treated with some kind of tenderiser?
    I never get the same texture/flavour (nor would I want to) in meat from the butchers.

    I just can't put my finger on it, but there is just something wrong with them!!

    HOPING(!) that someone can answer my question here!!!

    Mass baked steak with a basting of preservative as they will be used for the whole day and reheated.

    Preservalicious.
    Is there a particular breed/cut/quality they use?
    Do they just whack em back on the pan before they go back out?
    I'm slightly intrigued now!
